i opened a tin of coconut milk to make nasi lemak. it was rather a larger tin than i used to buy, and as it was the sort of thing that wouldn't keep long i decided to make agar agar with it. i forgot that making agar agar is rather a lot of work. not difficult, just time-consuming and lecheh, doing the alternate layers of plain and coconut agar, and although i poked lots of little holes with the prongs of a fork the layers didn't hold together very well. the coconuty layers were too soft and mushy. i wonder how to properly mix the coconut bits so that it would be of the same consistency and firmness as the plain agar. su-lin? cindy? but it did taste good. and i made three full trays of it! and i still like the texture and taste of agar agar more than konnyaku and jelly and pectin all the other kinds of gelatinous thickening ingredients.
