Since, however, Latin words imported into English prior to the conquest often maintain their Latin declensions, I imagine that ‘cardinales’ would be equally acceptable. ‘Cardinales’ is, perhaps, even more likely as there were no cardinalitital dioceses in England until much later and L ‘presbyteri cardinales’ would not see enough common usage to devolve into OE declensions.
