tried to make a sort of rosti today! didn't intend to make one - was boiling potatoes to mash up for the bottom of a casserole but potatoes do take so bloody long to boil and i am no good at that sort of thing, standing in front of stoves and minding pots and pans. got annoyed after 5 minutes or so and fished all the potatoes out. eye fell on the awful new plastic grater i got and thought, well i was fool enough to get it i might as well use it - so grated up the potatoes. (grating things is rather satisfying, actually, rhythmic motion and strips of potato falling steadily.) i didn't fry them of course, not good at frying and flipping. i just piled all the grated potatoes in a casserole dish and threw on some butter and salt and some slices of bacon and patted everything down and left it in the oven to bake. the top got all lovely and brown and crackly and the bottom was cooked too, if still a little too crunchy. i am most pleased with the result. next time i mean to make one i'll mix in spices and such too. spring onion, for instance! it'll be like a chinese cong you bing, except with potatoes! heehee.
