cappuccino and white chocolate muffins

1/4 cup instant espresso
1 tablespoon boiling water
2.5 cups self-rising flour
1/2 cup fine sugar
2 eggs lightly beaten
1.5 cups buttermilk
1 teaspoon vanilla extract
3/4 cup melted butter
3.5 oz white chocolate, roughly chopped
2 tablespoons butter
3 tablespoons brown sugar

Dissolve coffee in boiling water and cool. Mix flour and sugar into a bowl. To this, add egg, buttermilk, vanilla, melted butter, white choc, and coffee mixture and roughly combine all. Spoon into cases. Heat extra butter and brown sugar and stir till sugar dissolves. Spoon into cases and swirl. Bake for 20-25 mins at 400 deg F. Makes 8.
